Mauricio Cabrera, the operations manager and head development chef, won the southern area heat of the 2017 Creative Pizza Competition, run by the UK Pizza and Pasta Association.
The winning creation – the portabella spinaci – is topped with portabella mushrooms, fresh spinach, ricotta, caramelised red onions, grated grana, double cream and fior di latte mozzarella. Made using fresh vegetables and high-quality ingredients, the mozzarella is imported exclusively by basilico from Soligo in Italy’s Veneto region.
Mauricio has created no fewer than 15 different types of pizza since he joined the brand in 1998. basilico opened its first branch in Fulham in the late 90s and now has 12 stores across London.
